Side note; I've been trying to get s Shiny Virizion in Ultra Sun since before Pokémon Let's Go! came out.
Still haven't gotten one.

Some thoughts on the game(s):

The catching aspect took some getting used to, but it's not dissimilar to the Safari Zone in previous games.
Using the motion controls is mandatory to aim Pokeballs (fortunately not for also throwing them), and most wild Pokémon move around a bit.
(this can be delayed by throwing a specific Berry at it)
A Pokémon is likely to run away if you do nothing for a few seconds, or if you fail to catch it quickly enough.

Seeing wild Pokémon on the overworld is useful, especially since Shiny Pokémon show up on the overworld as Shiny.

Trainer battles are still the same; and legendaries and a few large Pokémon (like Snorlax and Electrode) have a battle with a time limit before the catching part.

The game gives you candies for catching Pokémon; you can use these in place of Iron/Calcium/Zinc/Carbos/etc, the type of candy depends on the Pokémon caught (like Diglett gives you Speed candy).

The game also expects and encourages you to use these candies to increase your Pokémon's stats, which is nice because you can increase a Pokémon's weakest stat to good/great levels. 

The starter Pikachu/Eevee won't evolve, but the game gives you candies to raise their stats, and not just moves they normally wouldn't learn, but also moves exclusive to them.

Despite being only the original 151 Pokémon, the Fairy and Steel types are implemented, as well as Dark type moves.

Mew's behind a 50 USD paywall, which is one of the only negative things I have to say about the game.

You can have a Pokémon outside of its pokeball; it can follow you and be interacted with.
Best feature ever and it's only been in Yellow, HeartGold, and SoulSilver.

No HMs, and no Gym Badge requirements; your Pikachu or Eevee can learn the equivalents of Fly, Surf, Cut, Strength, and Flash; these aren't in-battle moves, you don't need to have it forget any moves.

As long as you have access to another Switch and both versions, filling the Pokedex is easy.
Charmander, Squirtle, and Bulbasaur can be found in the wild, or you can find a few NPCs that'll straight up give them to you.
Hitmonlee and Hitmonchan are also both found in the wild, or you can go to the Dojo in Saffron to get one of them.

Some items respawn daily, like Moon Stones in Mount Moon. 

Pretty good game, all in all.
Definitely more positives than negatives.
